I know a lot of us eat more chicken than we care to admit so I thought I would pass along a simple marinade that will last a week at least. First take as many boneless/skinless breasts as you will eat in a week, place them in a metal or glass bowl and add the following: Extra virgin olive oil (enough to coat all breasts plus a little more) Italian herb mix (you can buy the large container of mix at Sams) Garlic powder, about 1tbsp A couple of good pinches of Kosher salt and pepper 1/2 tsp of Poultry Seasoning (optional) Mix everything real well so that all chicken breasts are coated well with oil and herbs. Let this mix sit over night if you can but a couple of hours will work just as well. Here is a tip if you decide to grill your whole weeks worth at once: The chicken you are not going to eat immediately after grilling only needs to be cooked about 3/4 of the way through. When you are ready to eat them then put them on a microwave safe plate and add a little bit of water to the plate and then cover TIGHTLY with plastic wrap. Microwave for about 2 minutes. This will finish the cooking process and the water will add moisture lost in the initial grilling. The most important thing to remember is to chill the par-cooked chicken ASAP. Toss it in the freezer for about 10 minutes and then transfer it to the fridge. For some variations on the base marinade: 1. Squeeze fresh lime, lemon or orange juice or add slices of each 2. Add some drops of Tabasco or your favorite hot sauce, chili powder or cayenne pepper 3. If your a baller then use fresh whole herbs instead of dried 4. You can "Mexican" it up by adding sliced fresh jalapenos,cumin, paprika and chili powder. Anyway, you get the idea. Enjoy and if you make a good variation then post it up.
