I've shot food professionally just once but I had a buddy be the stylist so aside from the generic advice of backlighting your subject, that's about all I can say. I do remember my buddy using ice to add frost to the outside of the glass to get that frosty, moist look for mugs whenever a picture of a beverage was done. I'm assuming there could be a substitute to the sundae on top of the float so it doesn't melt quickly, kinda like using mashed potatoes for ice cream shots and what not. :dunno:
