Building code requires a make up air system if your range hood is exhausting >400cfm because of negative air pressure

You have one or you opening doors and shit to keep your air pressure neutral?
House probably built in the 50s and has enough leaking spots

Y’all get the brand Schweigan over there? Hoods are noisy as fuck. But I got a Schweigan. Goes great with any other brand cuz they sell em with no brand marked on it. But the big difference is the fact that the fan is mounted out on the roof rather than inside where you hear it. Almost dead silent as the lowest setting, quieter than other hoods when it’s at Max.
Interesting. Not sure if we have that here. Everything else is have is Bosch so this one matches but fuck it sucks its so loud

Yes of course obviously.

I typically only need the low setting which is like 200cfm so that keeps my house from imploding.

We've got a Costco cheapo "Valore" that cost like 600 bucks and it's a 700cfm fan. It's got a quiet setting that works pretty well and it's really all we use unless I'm searing something, and I'll put it to 1 or 2. We never use the max setting. It hoooowls

Mine is like a jet engine. Has 3 settings though.
Mine has five.

1. Mildly annoying
2. Annoying AF
3. WILL SOMEONE PLEASE TURN THAT OFF?!?
4. CAN YOU SAY THAT AGAIN, I DIDN'T QUITE HEAR YOU!!!
5. Carrier flight ops.

As far as I can tell, they all have the same CFM, which is maybe enough to catch the smoke from a match held directly against the screen.

Found your problem. Those mesh screens are trash.

The underside of your hood should look like this:
