Trim your ribs
Light coat of Italian dressing
Season HEAVILY
Sear over direct fire until you caramelize / get good color
Move to the side and go at 275 ish for 2 hours. Add hickory to fire
"If your fire doesn't sting your face, it's not hot enough"
