Are you just using a pellet maze or whatever?

I want to try some cold smoking. :hmm:

the maze would work, but i went with the extendable tube.

A-MAZE-N extendable tube is skinny and gives me more room for food.

How long do you smoke for?

Assume the waiting let's the flavour mellow?

i go 4 hours, but that is up to you. scroll up on previous page to see that i cut standard kraft/cabot/tillamook or whatever brand you choose into smaller blocks for smaller servings.

here are the cliff notes:

4 hours in smoke (rotate every hour)
bring indoors and wrap individually in parchment paper and put in fridge for 24 hours
after 24 hours vacuum seal individually and put back in the fridge
rest time is basically 1 week per hour of smoke time (so if i go 4 hours i wait a month before opening)

enjoy for months and months and months

I'm thinking about giving BBQ smoking a try. Any recommendations on what size pellet smoker and budget I should set aside for it as a beginner? Prob max I would need to make would be 4 racks of baby back ribs. Looking for value and reliability.

Well how much do you want to spend?

I think for the price GMG offers a good product for a decent price.

You could easily do something from GMG or even a Recteq.
