FOOD Gluten free pizza dough recipe?

So... the new girl I'm seeing is celiac.... which sucks... because I fucking love gluten.

Anyway, she loves the pictures of my pizza, and asked me to make some that wouldn't kill her... so I'm looking at various recipes on google, and I'm think of trying this one.
Anyone have experience making gluten free pizza? Got a better recipe that this?

seems like the missing element will be the chew that you would normally get from the gluten in the wheat flour, so how do you replace that I wonder?

I've never tried to make a gf pizza other than on flatbread, and I'm assuming she wants some sort of crust more than a flatbread lol.

One thing to note with celiacs, please be sure to clean your prep surfaces really well. Cutting boards especially are an area of concern with cross contamination.

Interested to see what you come up with though. It's a lot of trial an error with GF.

Wife has been diagnosed celiac for nearly 11 years now and honestly we’ve never found a recipe that turns out good.

I would just get the Dominos GF pizza, wife says that one is the best of the big chains. She’s never gotten sick from it either, but every celiac has different tolerance levels for cross contamination.
