I usually do a fairly normal spatchcocked toasted Turk, but this year I decided to do a Puerto Rican pavochon with mofongo stuffing. Pretty excited about it tbh. What are you guys gonna do?

Cooked yesterday. Tried the big easy oil less fryer that was recommended in the other thread. Did a simple wet brine with salt, thyme, rosemary and sage. Was easy and came out really good.

I got a pair of Foster Farms turkey thighs.

Butter, salt, pepper, garlic. Then into the oven. :dunno:

What are you guys using for seasoning, first time making a turkey in the oven.
I usually do salt pepper poultry seasoning onion and garlic powder little bit of cayenne and paprika. I also spatchcock it and dry brine it for 3 days. Super easy and roasts much faster than a whole bird. Good crispy skin too.
