Dry brine + standard bake

Brine is
Salt, Thyme, Rubbed Sage and Papper

Cover turkey, stuff some inside and under skin on breast meat

Fridge for at least a day like that covered

Garlic butter rub for baking

Butter + garlic (duh)
stuff as much under skin by breast meat as you can and mush it all over the inside. cover turkey with the rest

bake/baste as normal

Due to our poverty kitchen with only one oven, I’m going to use the propane grill. 14 hour wet brine on an 11lb organic heritage bird.

Forgot to get pellets, could have smoked it.

Tips for gravy if you're cooking on the grill and can't catch the drippings? I was going to smoke the neck and other bits, minus the liver, to use as a base but not sure where to take it from there.
