How did you sear the steak? Separate grill or does your pellet smoker get that hot?
infrared searing station -- docs say it can get up to 1600 degrees

Nice!! Never had either... was it a typical hot Napa red?
of the two I preferred the screaming eagle more, which is surprising because I typically enjoy a bold cab. the screaming eagle is more merlot based so it was a bit smoother, more nuanced. Neither of them is what I would describe as hot -- I'm guessing low to mid 14%.

Is that built into the pellet grill or a standalone? Link in either case? I'm shopping for a pellet grill now but worried about the lack of searing ability.

some pellet grills allow you to change an insert to switch from indirect to direct heat. so that is one option. still, with the wood pellets you can probably only get to 400ish degrees or so.

Another option is to go with a stand alone searing station. this is the one I have the Summerset SSEAR-1NG. gets up to 1600 degrees. makes quick work of searing

a third option is to sear using a blow torch -- takes awhile, not practical for a big piece of meat or if you have multiple steaks

the cum sorta clumps up into chunks in the wine so it's not a good idea to mix. Best idea is to swallow the cum immediately from the tap and then follow up with a wine chaser.

This. I grill til 115 then let it rise, or 105-110 if I'm searing after.
