That Larkmead brings back memories, though. I'm not sure which vintage they were pouring at a dinner in Yountville - but I was very early in my pregnancy at the time and could not drink at dinner (famous for wine pairings, but I opted for the non-alcoholic pairings which were excellent), which meant they all knew why I could not drink even though we had not yet announced. My daughter was very nearly almost named "Lark" because of that wine. :love:

It’s 120-125 when done in both scenarios. Better than charcoal :mamoru:

ah gotcha. i prefer a few degrees more, target around 128 or so. my searing station gets so hot that it's literally a few seconds on each side, not a lot of heat gets into the middle of the steak.

let's consider this. the food wasn't some gourmet recipe, it was meat on a grill. The wine was not first growth bordeaux -- it was bold napa, and relatively recent too. But of course this dinner and wine was classy.

So american, bold yet classy.
