If anyone is getting bored with their eggs...thought I'd write this up: Ingredients: 6 eggs (use of whites/ yolks up to you, i like 3 whole eggs + 3 whites) 1 tomato cilantro (or spinach...) hot sauce of your choice whole wheat tortillas How to prepare: (for this whole meal you can do it all on high, but I prefer medium because it gives it better flavor and texture) Cut the tomato and cilantro up, start up a skillet with some olive oil salt/pepper in it on medium- throw your tomato and cilantro in it. As that is going (keep it covered): Crack the Eggs into a bowl, put a little milk or water in there to scramble them up with a wisk or fork. Everyone knows how to make scrambled eggs right? You can either take another skillet and start making htem in there, or wait for your tomatos to become somewhat soft and pour the eggs into that one and start making it in that skillet...its totally up to you. One thing you will want to make sure to do is drain the tomato skillet because the water from the tomatos will be released into the pan. As this is going, (optional) start your oven up at 350. Put the tortillas in there for a minute or two to make them a little crisp. Once it is close to all scrambled up just add hot sauce to taste, and put into the plate and enjoy Obviously you can add more eggs or whatever; its up to you...black beans/cheese also go well in it- just have fun.
