Most of the protein is found in the fallopian tubes, but you have to scrape it in order to reap the reward of "all the protein."

~ 3/5th's of the protein is in the white and 2/5th's of the protein is in the yolk. While the yolk does contain fat, it also has tons of vitamins that are good for you, where as the white is only pure protein.
The yolk is also the source of the cholesterol.
