test it out by taking one out and eat it , should be mushy. take half a cup from the juice and fresh garbanzo and set aside.
Set also aside another half cup of the liquid in the pot. Now comes the anoying part. rinse out the beans, and put them in a big large bow and under the sink add water sift thru it and remove all the skin. check on youtube on how to do this.
add the liquid to the food processor and blend for 1 minute, should turn into a foam.
add the beans, 10 garlic cloves, tablespoon salt,tablespoon cumin. and 2 tablespoons lemon, now blend for about 1 minute, after that you're going to add the 1 cup of tahini slowly. Make sure when you buy the tahini in the jar you mix it up, it's like peanut butter the oil rises to the top. Slowly add the tahini and then add 3/4 cup fresh squeezed lemon. slowly add both back and forth. Should be about 4-5 minutes total on the food processor.
put in desired container, add on top the saved up beans with little liquid. add olive oil on top with parsley and Sumac<== most stores carry this
